How We Make Live Vinegar

From Local Fruit to Finished Bottle

We start where all great vinegar should start — with real fruit, real botanicals, and real fermentation. At The Tickled Pickler, we first transform locally sourced fruits, herbs, and vegetables into house-made wines. Because exceptional vinegar doesn’t begin with shortcuts — it begins with exceptional wine. Our wines are allowed to mature and develop depth before they ever see the generator. Then comes slow, oxygen-rich acetification, where alcohol is naturally converted into acetic acid. Many of our vinegars are co-fermented over fresh herbs, spices, and seasonal ingredients, building layers of complexity right inside the system. After conversion, the vinegar rests again, softening and rounding out before bottling. The entire journey takes months from fruit to finished bottle. We age twice, we never pasteurize, and we bottle it alive — full of character, culture, and flavor.

How the Generator Turns Wine into Live Vinegar

Once our wine is ready, it’s gently pumped into our trickle generator — a traditional, oxygen-driven system that allows nature to do its work. The wine slowly trickles over a living bed of acetic acid bacteria while continuous airflow feeds the culture. In this carefully controlled environment, the bacteria convert alcohol into acetic acid — transforming wine into vibrant, living vinegar. Temperature and acidity are monitored, but the biology leads the process. Nothing industrial. Nothing rushed. Just steady airflow, active culture, and time. As the vinegar forms, it drains down below, unfiltered and alive — the foundation of every bottle we craft.
