This aromatic drinking vinegar combines crisp Honeycrisp apples and fresh fennel with warming spices and honey. Perfect for both refreshing non-alcoholic beverages and craft cocktails, it balances sweet, spice, and bright acidity.

1 pound tart apples, like Honeycrisp, sliced

¼ cup sliced fennel

1 teaspoon allspice berries

Zest of 1 lemon (optional lemon garnish)

1 cup pure honey

1 cup hot water

¾ cups Apple Babcia Vinegar

3 cinnamon sticks

Preparation

In an airtight, nonreactive container, muddle together the apples, fennel, allspice, and lemon zest.


Add the honey, hot water, vinegar, and cinnamon sticks; seal the container and shake for a couple of seconds to combine.


Refrigerate for 3 to 4 days and then strain through a fine-mesh sieve or cheesecloth into another airtight, nonreactive container.


Store in the refrigerator indefinitely.


When mixed with sparkling water instead of plain water, it creates a refreshing non-alcoholic beverage that captures the essence of fall, with each sip offering layers of sweet, spice, and pleasant acidity.
