About the Recipe

This is a quick recipe that can be made in just 15 minutes! It’s the perfect treat for weekends and easy enough to make with the kids. It’s also gluten-free and a much healthier version of standard waffle/pancake recipes.

Ingredients

INGREDIENTS:

- 160g rolled oats (gluten free if possible)

- 1 egg

- 1 banana

- 1 tsp vanilla extract

- 1 tsp baking powder

- 1 cup milk (lactose free is acceptable)

- 2 tbsp any Fruit Vinegar (we prefer Apple Babcia or Cherry Poppin)

- Pinch of salt


Preparation

Instructions

1. Add the milk and vinegar to a small bowl and allow to sit for 5 minutes to turn into the buttermilk substitute.


2. Combine all ingredients in a blender or hand mixer until silky smooth.


3. Preheat a waffle iron (or greased griddle) and spoon on the waffle batter. Cook until crispy and golden brown.


Serve with sliced fruits, a sprinkle of cinnamon, and a drizzle of honey or powdered sugar as preferred.
