About the Recipe

A versatile sauce that combines the sharp bite of horseradish with creamy richness and a subtle tang from live vinegar. Perfect for beef, smoked fish, or as a zesty sandwich spread.

Ingredients

Base:

- ½ cup sour cream

- 2 tablespoons mayonnaise

- 2 tablespoons prepared horseradish, drained


Seasonings:

- 1 teaspoon live vinegar (Kilt-y, Mignonette, or Apple Babcia)

- ¼ teaspoon black garlic salt (or kosher salt)

- ⅛ teaspoon black pepper

- ⅛ teaspoon Worcestershire sauce


Garnish:

- 1 tablespoon fresh chives, finely chopped

Preparation Time
- Total Time: 5 minutes
- Resting Time: 30 minutes (recommended)

Yield: Approximately ¾ cup

Preparation


1. Combine Base Ingredients

   - In a medium bowl, whisk together sour cream and mayonnaise until smooth

   - Fold in the drained horseradish


2. Add Seasonings

   - Add vinegar, salt, pepper, and Worcestershire sauce

   - Stir until well combined

   - Taste and adjust seasonings if needed


3. Finish

   - Fold in the chopped chives

   - Transfer to an airtight container



Serving Suggestions


Traditional Pairings:

- Prime rib or roast beef

- Grilled steak

- Smoked salmon

- Roasted potatoes


Creative Uses:

- Sandwich spread

- Vegetable dip

- Mixed into mashed potatoes

- Added to deviled egg filling


Recipe Notes:

- Allow flavors to meld for 30 minutes before serving

- Adjust horseradish amount to taste

- For a thinner sauce, add a small amount of cold water or additional vinegar

- Fresh horseradish can be substituted for prepared, reduce amount by half


Storage:

- Keep refrigerated for up to 1 week

- Stir before serving

- Best served chilled



Note: The sauce will be at its spiciest when freshly made. The heat level will mellow slightly over time.
