- 1/4 cup scotch vinegar

- 1/4 cup soy sauce

- 2 tablespoons honey

- 1 tablespoon hot sauce or red pepper flakes (optional)

1. Combine all ingredients in a bowl and whisk until honey is fully incorporated.

2. Pour over meat in a non-reactive container.

3. Marinate for several hours to allow flavors to infuse.

* Asian-Inspired: Add grated ginger and sesame oil

* Extra Bold: Add crushed black or Szechuan peppercorns
